Ambrosia Fruit Salad

healthy_recipe_ambrosia_saladUsually made with heavy cream, sour cream and sugar, ambrosia salad can carry a hefty amount of calories.  However, by swapping out a few ingredients, this favorite dessert becomes a good source of protein and fiber.  

Below is the heathy twist on the recipe, courtesy of the BJC St Charles County chefs.  PRINT RECIPE CARD

 

 

 

Servings: 12

Ingredients:

  • 1 pineapple, diced
  • 2 cups green grapes
  • 1 cup strawberries, quartered
  • 1 cup blueberries
  • 1 can mandarin oranges, drained
  • 1 cup plain Greek yogurt
  • 2 tablespoons Truvia sugar blend
  • ¼ teaspoon vanilla


Directions:

Step 1
Combine fruits in a large bowl and mix gently, being careful not to crush the mandarin oranges./p>

Step 2
In a separate bowl, combine Greek yogurt, Truvia sugar blend, and vanilla and mix well.

Step 3
Gently fold yogurt mixture into fruit salad.

Step 4
Keep refrigerated until ready to enjoy.
